How would the single cushion version of Parisian hold up with an Ultradown core?
Would the core replacement warranty still apply?
It should hold up fine, though you may get a little more leather 'puddling' or 'stretching' than with the three cushion model. Yes, replacement warranty still applies.

Can you look in your records to see if the person that purchased the above Parisian couch ordered larger cushions? They seem bigger than all of the other pictures of the Parisian couch that I have seen. I am worried that the cushions will be too small. I was told by a sales person at a retail store that they are 22" wide and 17 1/2" tall--that seems small. I really love the style, but my family is giving me a hard time wondering if the couch won't be comfortable because the back cushions are small.
Those are standard cushions in that photo, but they are not set into the sofa properly, they're just laid atop the seats from the delivery. Back Cushions have to be set under tension into the seat cushions.
The only way you will know for sure it to try one out ahead of time!
